RECIPE - DIPS & SPREADS
This is great sauce that can be had with turkish and greek dishes, or too cool down a kofta kebab. We have also enjoyed it as a dip for veg and for chicken wings as well. We like this quite lemony so have added quite a lot to the recipe, I would gradually add the lemon to taste and stop when the level is right for you.
- Cucumber, grated - 1/2
- Lactose-free Yoghurt - 4 heaped tbsp
- Mint, finely chopped - 1 bunch
- Lemon, juiced - 1
- Smoked Paprika
Start by grating the cucumber on the large side of the grater. Then sprinkle with salt and mix, leave for 20 seconds and then bunch it all together and squeeze out the moisture. This will make the flavour of the cucmber more intense and also make the whole tzatziki better flavoured.
Then mix together with the yoghurt and the mint. Season with some pepper and add in the lemon juice to taste.
Sprinkle over some smoked paprika and serve.
