Fluffy Gluten Free Pancakes
I wish Pancake Day was every day. These are play on fluffy american style pancakes, but are gluten free and can be made dairy free too. Perfect topped with blueberries or with bacon and maple syrup.
- Eggs - 3, large
- Gluten Free Plain Flour (We use Doves Farm) - 115g
- Baking Powder - 1 tsp
- Almond Milk - 140 ml
- Salt - 1 pinch
- Butter or Dairy Free Spread
Separate the eggs, putting the whites in a bowl and the yolks into another. Add the flour, baking powder and almond milk to the yolks and mix until you have a smooth thick batter.
Whisk the whites with the salt until stiff, and fold into the batter.
Heat a non-stick pan on a medium heat.
Add a little butter or dairy free spread, which ever you prefer to use. Once melted in the pan pour in some of the batter and cook for a couple of minutes until it’s looking firm and golden. Flip and cook on the other side so both sides are golden.
